Taste: Deep purple colour, almost black, Fresh, fruity and ample with notes of black berries and spices, velvety tanins, long finish on notes of cinnamon, vanilla and spices. In my view, it would ideally pair with a matured meat, Irish lamb/beef stew, even with oriental style cuisine, lamb tajine or Peking duck.

| Le Grand B. 2022, Domaine La Colombière | **Astonishing dry white wine, organically grown on Boulbène soil (clay-sandy soil typical of the area). Grapes were hand picked with sugar/acidity balance earlier than usually, on September 23, 2022. Vinification in casks.**

Taste: Gourmet white wine. Complex and rich, with notes of autumn or exotic fruits, citrus, pear, quince, apple, pineapple, notes of spices (pepper, saffron). It would nicely pair with Seafood, varied white meats, all cheeses, foie gras, saffron cuisine, soft spices (ginger, lemon pepper).

Taste: Dark ruby colour, fruity with notes of black cherry and black berries. Ample, complex, round and velvety on the palate. Ready to drink or to keep up to 10 years. Pairing is incredibly versatile. Would elevate a juicy rack of Irish lamb, Grilled beef as well as in stew, Red Tuna steak in a rich tomato and pepper sauce, Cashel blue cheese or Goat blue cheese from Slane.

Taste: With notes of yellow fruits, the attack is ample and lively on the palate. Both fruit and mineral with a well balanced acidity. Long fresh finish. Ideal to share with friends “en apéritif” as well as over Goat/sheep cheeses or spicy dishes.

Country/ Region: Collioure.
Taste: Dark ruby red wine. Both bodied and supple. Marked notes of ripe black and red berries and violet. Refrigerate 15 minutes before opening to maximise the flavours, it will best pair with grilled poultry or white meats and cow’s milk cheeses.
