**Around 1000 bottles of this graceful, organic wine are produced annually. Grapes are grown on sun bathed and wind swept steep shale terraces overlooking Banyuls-sur-mer. **

Grape Variety: Grenache 55% – Mouvrède 30% – Syrah 15 %

Country/ Region: Collioure.

Taste: Dark ruby red wine. Both bodied and supple. Marked notes of ripe black and red berries and violet. Refrigerate 15 minutes before opening to maximise the flavours, it will best pair with grilled poultry or white meats and cow’s milk cheeses.

**Astonishing dry white wine, organically grown on Boulbène soil (clay-sandy soil typical of the area). Grapes were hand picked with sugar/acidity balance earlier than usually, on September 23, 2022. Vinification in casks.**

Taste: Gourmet white wine. Complex and rich, with notes of autumn or exotic fruits, citrus, pear, quince, apple, pineapple, notes of spices (pepper, saffron). It would nicely pair with Seafood, varied white meats, all cheeses, foie gras, saffron cuisine, soft spices (ginger, lemon pepper).

**This unusual blend make this white wine very atypical. Organic grapes grown on karstic clay-limestone soil, and hand picked mid september. 6 months maturation in casks and terra cotta jars. **

Taste: With notes of yellow fruits, the attack is ample and lively on the palate. Both fruit and mineral with a well balanced acidity. Long fresh finish. Ideal to share with friends “en apéritif” as well as over Goat/sheep cheeses or spicy dishes.

**This organic wine is 100% natural, using 100% indigenous yeast. Grapes were hand picked on August 30th and September 11th, 2023 at dawn, to keep both tension and freshness in this unique blend of local grapes, grown on pebbled plateau with deep clay-limestone subsoil. The result is chiselled and precise. **

Grape Variety: Clairette Blanche 25%, Viognier 20%, Roussanne 20%, Marsanne 15%, Grenache 15%, Bourloulenc 5%

Country/ Region: Côtes du Rhône Villages, Ardèche.

Taste: Dry and bodied white wine, with notes of peach, stone fruits and melon. Would pair with a delicious Irish braised pork belly, poultry or mature cheese.
