Collioure

**Around 1000 bottles of this graceful, organic wine are produced annually. Grapes are grown on sun bathed and wind swept steep shale terraces overlooking Banyuls-sur-mer. **

Grape Variety: Grenache 55% – Mouvrède 30% – Syrah 15 %

Country/ Region: Collioure.

Taste: dark ruby red wine, both bodied and supple. Marked notes of ripe black and red berries, violets.

Pairings: Roasted poultry, roasted pork loin or veal chops, slow cooked stews – Soft and semi-hard cow’s milk cheeses

Taste: deep, complex, full-bodied red wine with smooth and supple tannins. Intense notes of ripe blackberries, long finish on notes of mocha, cocoa and vanilla.

Pairings: ideal with Irish medium rare venison/beef fillet – aged cows milk cheeses. Spare a little to elevate a rich dark chocolate dessert.
