** Another rare wine, only produced to 600 bottles. Vine are grown on the sunny and windy steep shale terraces overlooking Banyuls-Sur-Mer and Collioure, grapes are hand picked and matured in oak casks for 12 months **

Grape Variety: Grenache Noir 55%, Syrah 45%

Country/ Region: Collioure

Taste: deep, complex, full-bodied red wine with smooth and supple tannins. Intense notes of ripe blackberries, long finish on notes of mocha, cocoa and vanilla.

Pairings: ideal with Irish medium rare venison/beef fillet – aged cows milk cheeses. Spare a little to elevate a rich dark chocolate dessert.

**This organic wine is 100% natural, using 100% indigenous yeast. Grapes were hand picked on August 30th and September 11th, 2023 at dawn, to keep both tension and freshness in this unique blend of local grapes, grown on pebbled plateau with deep clay-limestone subsoil. The result is chiselled and precise. **

Grape Variety: Clairette Blanche 25%, Viognier 20%, Roussanne 20%, Marsanne 15%, Grenache 15%, Bourloulenc 5%

Country/ Region: Côtes du Rhône Villages, Ardèche.

Taste: dry, complex and full-bodied white wine. Subtle oiliness and soft astringency, with a hint of smokiness. Notes of peach, stone fruits and melon and pleasant nuttiness (almond)

Pairing: Irish braised pork belly or chops, roast poultry, slow cooked lemon chicken – Rich fish (halibut, salmon, tuna) as well as pan-seared scallops – Matured and hard cheeses – Mushrooms risotto – Mildly spiced Asian or Moroccan cuisine.
